What are Gagootz?

I stopped into the new Papa Joe's in Washington Mills. I consider my palate to be well traveled, but I was surprised to find a menu item I'd never heard of before, Gagoots.

Turns out gagoots, also spelled gagootz is the name of Italian zucchini and also the name of a traditional Italian stew of zucchini, potato and sausage in a red sauce (or gravy, if you prefer).
