Homemade Salsa – Eric Meier Cooks
I found a great recipe on Pinterest for homemade salsa that I just had to modify and try for myself.
The recipe for homemade salsa is for a thin salsa, very similar to what's served in many Mexican restaurants. It's not a chunky pico de gallo but a nice smooth salsa.
My recipe consists of:
1 can of diced tomatoes
1 can of Rotel (tomatoes + peppers)
1/2 chopped onion
1 clove garlic
1 teaspoon of agave nectar (the original calls for honey - I like the agave substitute as it makes the salsa vegan and more authentically Mexican)
1/2 teaspoon of salt
1/4 teaspoon of cumin
1 lime juiced
a bunch of cilantro.
Puree all the ingredients in a blender. I made this a few hours before dinner and let it chill.
