I'm a huge fan of homemade salsa.  There's nothing like authentic salsa you get at a Mexican restaurant.  Although it's not exact, our salsa on the 'Lite Lunch' menu today is close.

To make your own salsa you'll need tomatoes.  Roma seem to work the best but you can use any ripe tomato.  Chop and add chipped white onions.  I use 2 jalapeno peppers, chopped but I take the seeds out of one so it's not too spicy.  I like things hot but not too spicy.  Add chopped cilantro, lime juice. oregano, salt & pepper, coriander, garlic & onion salt.  Mix and let sit in the fridge so the flavors can blend.
