Eating healthy isn't easy.  Not only to find food that's good for you, but food that tastes good too.  Salmon is healthy but sometimes can taste to fishy for my liking.  It's all in how you cook it.  I found this interesting recipe for honey pecan glazed salmon on my new favorite website Pinterest.  So that's what we'll put on the 'Lite Lunch' menu today.

The recipe, from 'The Girl Who Ate Everything' calls for

1/4 c. honey
4 t. finely chopped pecans
1 T. soy sauce
4 (6 oz) salmon fillets
1/4 t. salt
1/4 t. black pepper

Preheat oven to 425 degrees. Combine first 3 ingredients in a zip lock bag. Sprinkle fish with salt and pepper; add to bag and seal. Marinate in refrigerator at least 15 minutes.
Remove fish and nuts from bad, reserving marinade. Place on foil lined pan and top with nuts. Bake at 425 degrees for 15 minutes or until fish flakes easily with a fork, basting fish twice with reserved marinade while baking.

Now if I could only get the rest of the family to eat salmon.  Maybe this recipe will do the trick.  A little sweetness with a little crunch.  And from the website reviews, it looks like you can use the marinade for other pieces of meat.  I think I'll try it on chicken too.  Sounds yummy!
