Switchel is a classic American beverage which traces its history back to the Colonial era. It is made with ginger, apple cider vinegar and a sweetener such as maple syrup, honey or molasses.

I tried a bottle recently and really enjoyed it so I decided to try to make some on my own. It's incredibly simple.

For a cup of switchel, this recipe from TheKitchn calls for:

2 tablespoons apple cider vinegar
4 teaspoons sweetener (molasses, maple syrup, honey, sugar)
1/4 teaspoon ground ginger or 1 teaspoon grated fresh ginger
1 cup water

The Mason jars I had were three cups so I changed the proportions to a easily remember-able 6 tablespoons of vinegar, 4 tablespoons of sweetener and 3/4 teaspoon of ginger.
