No Bake Cheesebake on the ‘Lite Lunch’ Menu
While surfing Pinterest, a great new website, I discovered this recipe for gluten free no bake cheesecake from Ez Pudewa. Cheesecake that is healthier AND you don’t have to bake, has to be good right!?
The recipe calls for
• 3 tablespoons unsalted butter, melted
• 2/3 cup Nutella
• 1 teaspoon pure vanilla extract (make sure that it is gluten-free)
• 1 (8 ounce) tub frozen whipped topping, thawed
-Stir together the cookie crumbs and melted butter. Evenly divide the crumbs between your individual serving dishes and press into the bottoms of the dishes to form a crust layer.
-Beat the cream cheese and Nutella until smooth. Add vanilla and mix. Fold in the whipped topping until well blended.
-Spoon the filling into individual serving dishes. Cover with plastic wrap and refrigerate for at least 2 hours before serving. Top with additional whipped topping, chocolate shavings, and/or toasted, chopped hazelnuts.
I don’t know about you, but I’m going to the grocery store to buy the ingredients so I can make this. It sounds delicious.
