Quesadilla on the ‘Light Lunch’ Menu
How many times have you forgotten to get something out of the freezer for dinner? Chicken Quesadilla’s are on the ‘Light Lunch‘ menu today because they are easy for those times you didn’t plan ahead.
This is one of my daughter’s favorite meals. I cooked up chicken tenders after I thawed them in the microwave for a few minutes. I used whole wheat tortillas. Placed chopped green onions and green peppers on the tortilla. Piled chopped chicken on top and sprinkled low fat cheese. I covered with another tortilla and stuck it in the over at 375 for 15 minutes, or until the cheese is melted and tortillas are crispy.
While the quesadillas are cooking, chop up lettuce and top with low fat sour cream. I also put salsa on my lettuce but my husband and daughter don’t like it.
I had chicken left over, so I used it on top of a salad with strawberries for lunch today. Yum!
