We eat a lot of red potatoes at our house, but they can get old after awhile.  That is until I found this recipe on Pinterest, to spice it up a bit.  Its quick, easy and low on calories. Plus the red skin on the potatoes is good for you.  So ranch roasted red potatoes are what we'll have on the 'Lite Lunch' menu today.

You'll need to wash and cut your red potatoes.  Place in a pan and spray with cooking spray.  Add a packet of dry ranch dressing mix and 1 teaspoon of salt.  Toss to coat.  Spray a cookie sheet with cooking spray and spread potatoes onto sheet. Bake at 425 degrees for 20-25 minutes or until the edges turn brown.

Tastes good and is good for you so happy roasting!
