If you're passing through New York's North County, you may run across some road-side signs advertising 'Squeaky Cheese.' Just what the heck is that?

Squeaky cheese is the colloquial name given to cheese curds. The spongy young cheese is popular in the upper Midwest, where they're often fried and in Quebec where they add the gooeyness to poutine.

We sampled some curds from Stoltzfus Family Dairy in Vernon Center.
