A parsnip is a veggie with similar amounts of vitamins and minerals potatoes have. They contain less protein than the potato but they offer more fiber and folic acid. You can find parsnips in most produce sections of the grocery store.
Potatoes are surprisingly healthy for babies (and adults) because they're rich in Vitamin B, folate and minerals such as potassium, magnesium and iron. Likewise, fresh or frozen peas are an excellent source of folic acid, Vitamin C, Vitamin K (good for bones), and Vitamin A (eye health and more)
