Sometimes the simplest meals are the best, like a homemade sloppy joe, or bar-b-que sandwich.  Here's a healthy meal makeover make with lower fat turkey.

I start my sloppy joes by crumbling and browning 1 pound of ground turkey with 1 chopped onion and half of a chopped green pepper.

While the meat is cooking combine in a medium bowl:

2 tablespoons of brown sugar

1/2 teaspoon of ground mustard

1 cup of water

1 cup of ketchup (I am currently loving Simply Heinz)

2 tablespoons  lemon juice

1 tablespoon of white vinegar

dash of chili powder to taste

Whisk the mixture and add to the browned meat, onion and pepper mixture.

Simmer until the liquid reduces, about 15 minutes.  Although the longer it cooks the better it gets.

This is one of those meals where the leftovers will taste better than they did the night you cooked it.
