Making corned beef and cabbage is nothing to be scared of. The crock pot does all the hard work. 

Corned is another word for curing. We use the word corned because the salt that's used in the preservation process is as large as a kernel of corn.

Corned beef and cabbage is not considered an Irish national dish. Yes, Ireland did export canned corned beef all over the world beginning in the 1600's, but corned beef and cabbage is part of the Irish-American culture. Corned beef was used in the Northeast (Boston) because it was much cheaper than pork.

How To Make Corned Beef And Cabbage

We chose the flat cut of the brisket and put it in the crock pot fat side down. Add the pickling spice and water. We then put onions around the corned beef, added carrots and potatoes. Turned the crock pot on high for about 8 hrs and leave it alone.

And here is the finished product. Yummy, delicious corned beef and cabbage. I can't believe we didn't take a picture of the corned beef sliced or anyone's plate. Oh well, we couldn't wait to dig in.
