Eric Meier Cooks: Bruschetta
Here’s a simple bruschetta recipe I use with lots of Italian themed meals.
1 baguette loaf, sliced
1 roma tomato, diced finely
Equal portions of olive oil and balsalmic vinegar
2 Pinches of Parmesan Asiago cheese, shredded
Pinch Italian Seasonings
Combine all ingredients and spoon onto bread.
I toast the bread at 350 for 8-10 minutes or until lightly toasted.
