We eat a lot of stir fry in our house.  It's not only good for you, but it's easy to make.  Since broccoli was on sale the last time I went grocery shopping, chicken and broccoli stir fry made it to the 'Light Lunch' menu.

I cook the 5 minute rice first so when my veggies and chicken are done cooking, the rice will be done too.  I also have a tried and true sauce that works with not only this stir fry, but beef and shrimp too.  Depending on how much sauce you like, combine 1/4 to a 1/3 cup of each - red wine vinegar, honey and low sodium soy sauce.  Shake in 2 tablespoons of cornstarch. Pour mixture into pan after cooking your chicken and veggies and cook until thick.  Spoon over rice.  Goes nice with a side salad or garlic bread, depending on how healthy you're trying to be.
