A parsnip is a veggie with similar amounts of vitamins and minerals potatoes have. They contain less protein than the potato but they offer more fiber and folic acid. You can find parsnips in most produce sections of the grocery store.
Add some carrots and potatoes for variety and away we go!
Ingredients:
1 potato
1 carrot
1 parsnip
NOTE: the extra fiber in parsnips will probably make your baby toot more so don't be alarmed.
