Last week I shared with you my recipe for a turkey sloppy joe.  Here's an even healthier version replacing the meat with white and garbanzo beans.

I make these vegetarian sloppy joes by dicing and cooking 1/2 onion and 1/2 green pepper in a small amount of oil in a medium sauce pan.  After the onion and green pepper soften I add 1 drained small can of grarbanzo beans and 1 drained can of white beans.

I mash the beans a bit in the pan with a potato masher.

While the beans are cooking, whisk together in a medium bowl:

1 tablespoon of brown sugar

1/4 teaspoon of dry mustard

1/2 cup of water

1/2 cup of ketchup

1 tablespoon of lemon juice

1/2 tablespoon of white vinegar

dash of chili powder to taste

Combine the sauce mixture with the beans and simmer until most of the liquid has reduced, about 15 minutes.
